Gluten Manager contains both prolyl endopeptidase (Tolerase G) and standardized dipeptidyl-peptidase IV enzyme activity (DPP-IV). The combination of activity causes a degradation or more specifically hydrolyzation reactions at both ends as well as the middle of the gluten molecule.
